According to the traditional calendar, spring has arrived.Yet the air is still cold enough to turn each breath white,and the chill of morning and evening lingers.
That is precisely why—why not taste the first hint of spring through wagashi?
To welcome Risshun, the beginning of spring in the Japanese calendar,we have prepared three kinds of cherry blossom–inspired Japanese sweets.
Kogane Dango (Cherry Blossom)
Soft, freshly made rice dumplings filled generously with cherry blossom–flavored bean paste.With every bite, a gentle floral aroma unfolds.
Mochi Dorayaki (Cherry Blossom)
Delicate pancakes scented with cherry blossoms,embracing soft mochi and mildly sweet red bean paste.
Sakura Domyoji
Textured domyoji rice enveloping smooth red bean paste,infused with cherry blossoms for a refined fragrance.The cherry leaf may be enjoyed according to your preference.
As you imagine the cherry blossoms yet to bloom,the quiet time spent waiting for springbecomes part of the pleasure of wagashi.
