Uguisu mochi

As the perfect Japanese confectionery for early spring, the elegant koshi-an (sweet red bean paste) wrapped in glutinous gyuhi (glutinous rice flour) creates an elegant atmosphere. The finishing touch is a sprinkling of Uguisu kinako (soybean flour), which gives it a delicate, flavourful taste.
